What to do with leftover matzoh:

Recipe

Ingredients
2 matzohs per person
2 eggs per person
1/4 cup milk per person
(for a special treat, use one "regular" matzoh and one "shmurah" matzoh per person)
Procedure
Break up matzohs into flat pan/bowl
Fill pan with cold water and let sit for 30 seconds, then drain off the water
Mix eggs and milk, pour into pan
Let the matzohs and liquid sit for about 20 minutes, stirring and flipping occasionally
Place a small amount of oil or butter in a large frying pan on medium heat
Place matzohs in pan about 1 - 1 1/2 thick
Cook until lightly browned, flipping occasionally
Serve
There are many opinions about how to eat matzoh brei:
I like it with honey and cinnamon
Some eat it with pancake syrup
Some eat it with salt and pepper
Some eat it with onions, fresh or sautéed
All are delicious...
