Happy Lunar New Year - with Burritos!

Since it's the Lunar New Year - I decided to celebrate with one of my people's traditional dishes: Bean burritos y arroz con frijoles.

I used to be a professional cook (in college) - some of my dishes don't have a written recipe...
 
Soak/cook dried beans (pinto or black or kidney or ...)
One package is a good amount.
 
Put 1/4 of the beans aside for the rice.
 
Sautee a large onion, a green pepper, several garlic cloves (chopped), and cilantro - mushrooms optional
Use a healthy amount of olive oil, about 1/2 cup
Season with salt, pepper, oregano
 
 
Mash 1/2 of the beans, mix them with the whole beans and add them to the sauteed vegetables and cook until they are pasty
 
Meanwhile, the sauce:
In a saucepan sautee onion, garlic, green pepper
Use a healthy amount of olive oil, about 1/2 cup
Season with salt, pepper, oregano
Chop two medium chipotle peppers in adobe sauce, add to the pot after the other veggies have become soft
Add one large can crushed tomatoes and one can tomato paste (mixed with about 2 cups water)
Simmer
 
heat 6-8 large flour tortillas until soft (2-3 minutes in microwave)
 
spoon two ladles of sauce in bottom of baking pan, spread it
keep about 2 ladles of the sauce for the beans
 
place about 3/4 cup of beans in a strip in the middle of a tortilla
top with about 1/3 cup cheese (monterey jack and/or cheddar and/or colby and/or mozzarella etc)
roll up and place in pan, line up burritos next to each other
when pan is full, top with a couple of ladles of sauce, to cover the burritos
 
place pan in oven @ 300F for about 1/2 hour - until sauce is lightly browned
 
cook a pot of rice
sautee onion, garlic, optional green pepper, optional mushroom
Use a healthy amount of olive oil, about 1/4 cup
Season with salt, pepper, oregano, cilantro (optional)
add the beans and a cup of grape or cherry tomatoes
add sauce
simmer on a low flame
mix with cooked rice
 
each burrito is two portions
